Bhai dooj special : Malai Ghevar


500 gm all purpose flour
1 1/2 litre water
50 gm sugar
1 gm saffron
150 gm ghee
1 litre milk
5 gm powdered green cardamom
2 ice cubes

For Garnishing

20 gm chopped almonds
10 gm chopped melon seeds
20 gm chopped cashews

For The Main Dish

500 gm sugar
1 pinch saffron
250 ml water
3 cup ghee

How to make

Step 1
Heat ghee in a heavy-bottomed pan and cool by adding ice, by this all the impurities are left behind and pure ghee gets accumulated on the surface.

Step 2
Massage the ghee nicely till it is smooth and start incorporating the flour and water slowly till you get batter.

Step 3
Heat ghee in a heavy-bottomed pan, place a circular mould and start pouring the batter in center, fry till it is golden brown.

Step 4
Now, to prepare the sugar syrup for the main dish, heat water and sugar till the sugar dissolves completely.

Step 5
Add the fried Ghevar to the warm syrup and remove.

Step 6
To make the malai, heat milk, sugar, cardamom powder and saffron and reduce to half. Cool till it thickens.

Step 7
Top the malai on the ghevar and garnish with chopped nuts.
